One Week in Lunches

      I generally start my day with just coffee. Rarely do I  eat breakfast. Lunch is often leftovers but also might be breakfast type foods, or whatever I can cobble together from bits in the fridge or pantry. I don't think too much about it during the week, but on office days have to think ahead a bit to throw in my lunch bag. Fortunately there's microwave and dishes there to reheat food, and cutlery to eat so don't need to bother with those. 

      Here was last week of work day lunches. I had no office days last week. 

  • M- spicy tuna (pouch)  and mayo on toast, banana 
  • T- Can of ravioli, clementine
  • W- Trader Joe's Cheerios, clementine, apple slices with peanut butter
  • Th- Can of baked potato soup, toast 
  • F- Minute brown rice, cheese, avocado and salsa on two small tortillas 
     The two days I used canned goods were my least enjoyed lunches, but I had to grab something between meetings and didn't have thinking time. To be honest, Wednesday was probably my favorite lunch. Apples and PB is one of my go-to snacks. I try and get a serving of fruit or vegetables, more if I plan. I often grab a clementine, carrots, cucumber slices, or handful of grapes for snacks too. I think bigger pieces of fruit count as more than one serving. 

     My plastic wear for lunches or leftover freezer meals is lean, either by wear and tear or giving to others with food. I need to stock up again, but I save cottage cheese and yogurt containers or other reusable containers, then just label with tape and a Sharpie. 
     My office mates are practical, no frills brown baggers most days too, so when reheating hot dish that I transported in an old cottage cheese container, no one bats an eye. In fact, we all agree there's certain leftovers that make coveted prime lunches; pizza, homemade soup, and hot dishes. Even with so few days in the office, I occasionally have meals out, mostly for the social aspect, but sometimes because I didn't plan. 
     
     Yesterday and today I'm home bound by choice. I'm stocking the fridge and freezer with make ahead meals and lunch size portions. Last week I relied on the pantry as there weren't much for leftovers/ planned portions.

  1. The make baked potato soup??? Obviously, I need to stop by the soup aisle. Canned Chef Boy Ardee Ravioli is one of my favorite meals. I don't dare buy them. When I break down and buy ONE, I feel rewarded. And bad. Maybe you will tell us what make ahead meals you make.

    When I worked, I took lunch. My coworkers always went out to lunch. They were offended that I did not go out with them. They were young, had more money and energy than I.

    1. I doubt they had much more money. I've got 16 bean and ham soup made- huge quantity, plus today making chicken pea curry and a spicy Chili Mac and cheese. I made chocolate chip oatmeal cookie dough, freezing 2/3 in balls ready for a future bake. I'll send home the baked ones with my daughter as neither my son or I eat many except right from the oven. She'll take in her lunch for a break.

  2. When I worked, I always felt that having a packed lunch was like having a bit of home with me! We were lucky in that we had a nice break room with a refrigerator, sink, stove and microwave. The department also had a sundries budget for things like coffee, tea sugar and creamers. The person in charge would also order things like cup of soups and instant oatmeal. When my kids started school, I always remembered how take my a lunch made me feel, so I always tried to make it a bit special for them. As much as they do still enjoy eating out, they also liked taking lunch to their summer jobs. I have even had a call or two to stop by on the way home from grocery shopping so they could peruse the provisions!
    Your lunches sound lovely! Then again, I always enjoy reading any of your food posts! Aaaaand, I thought of you yesterday as we made a ham, and I still have your ham glaze recipe!

    1. I don't even recall my ham glaze! Our new office has few walking choices so less likely anyone eats out much, which is good for my budget. Last week meeting was at my old work building and there's a wonderful middle eastern deli, so had to join the group on our break.

  3. Baked Potato soup is so good. And I like the convenience of those tuna packs, lemon pepper is my favorite. Perfect to slip into a bag on the way out the door.

    1. I never bought the tuna packets until my son included when he did the shopping. The sweet and spicy or Thai chili convinced me they need to be in my pantry. I don't eat often but love them every couple weeks.

  4. When I was still working, I was "known" for bringing my lunch to work. "But, April, don't you want to come to--fill in the blank--with us?" I still have the same reputation when I attend local seminars (for continuing legal ed credits) that run all day. Almost everyone dashes out the door as soon as the lunch break comes; my colleague (and like-minded friend) Judy and I pull our chairs up together, open our respective brown papers bags, and start chatting and enjoying our lunch.

  5. Your lunches sound good and I like the variety. I don’t eat breakfast either but I am ready for lunch at 11 am most days. I don’t work and I try for variety too but my favorite lunch is still a pb&j. ColoradoGirl

    1. My time varies. Lately I've had meetings from 10-2, stupid times, so grab bites while meeting so needs to be easy.
