Meal Planning to End May

      It's the last week of May and it's been an expensive month. I'd like to avoid any additional grocery shopping until perhaps Saturday and even then, just what is absolute needed in the house. My son can fend for himself, but I'd like to leave some easy grab and heat meals to help his cash flow as well. We'll be out of basics like almond milk, bagels, bread, cheese, eggs, chicken thighs, and frozen or fresh vegetables, and fruit, but that's all I'd like to buy. So with intent to put in the freezer a few things he can pull out and reheat here's a few things I'm planning or already made.

  • Pulled pork burritos or bowls ( I made up two burritos with leftovers and froze.
  • Chili with rice (made Friday, froze two portions of the chili and a mixed chili and rice in a divided meal prep containers)
  • Chicken tortellini soup ( freeze a large portion)
  • Lentil dal, which I'll probably do Saturday ( or leave for her to do Sunday) since daughter is staying over for the pets Sunday as Son works all day and my flight is earlier morning.  Leftovers will be good to Tuesday. 
     I'm only gone four nights, back Thursday afternoon. The day we're back might be a take out night depending on how much I kept to my spending target, but I'd rather get a start in the no eating out/take out as soon as I'm home. No doubt I can scrounge a meal up with whatever is on hand. Groceries and eating out are two of the few discretionary line items I have in my budget that aren't fixed, but there's a basic minimum needed of course. None of my family is flush with funds right now, so going into June, I'm starting budget management here.

  2. Have a great trip! Your meals sound delicious & easy to pull together. We also have an easy week, as we have a lot going on with Nick this week. And, had 10 kids over yesterday, as they prepped for various senior events, and got ready for their backpacking trip (picture them setting up tents, etc in the house to make sure they knew how it worked, and inflating the camping mats, etc). They did get everything picked up, but the house was wild there for a few hours! I will miss all of the energy. ;-) - Hawaii Planner

    1. I can hardly believe it has been six years already form my youngest-I can imagine all your feelings. It'd of course seeing your own kids grow up, but knowing the whole change to friends and them being a part of your life.

  3. These sound yummy! Enjoy your trip! I need to learn to make a good chilli, because I will eat anything 5 days a week once I love it. I just get lazy with the prep... LOL

    1. Mine is not great, but it does the job. I load it with veggies as the base, whatever I have, then always at least two if not three different beans, chunky tomatoes, and lots of seasoning. I rarely make with meat as the girls eat this too, and while youngest isn't vegetarian she just prefers it w/o. Son just eats what's offered and he'll have a good grilled or grilled sandwich loaded with deli meat and cheese bulk up the meal. My husband liked to do that too.

    Your meals sound good, and I'm sure your son will appreciate meals to reheat.

    1. We've got a good amount of activities planned with Graceland, and he Civil Rights Museum, birthday dinner for my sister at a cool looking restaurant, and another dinner with her friendly coworkers.
